Our Räuschling, sourced from two different vineyard sites, captures the unique Lake Zurich terroir in a single bottle. It combines the lowest parcel, situated at approximately 420 metres above sea level, with one of the highest vineyards at 560 metres. After harvest, the grapes undergo a five-day cold maceration before the mash is pressed and transferred directly into 500 and 225 litre barrels for fermentation. Following fermentation, the wine undergoes gentle bâtonnage until Christmas. The wine then matures in barrel until August before being bottled and maturing further until January. This process allows our indigenous grape variety to fully develop its ripening potential, resulting in a complex and elegant wine that pairs harmoniously with fish and white meat.
