Unterbise is the name of our matured red wine cuvée. The wine is named after the local Bise wind, a cold breeze that sweeps directly over our vineyards at Rebhalde, creating ideal conditions for crafting complex, structured, and long-lasting red wines. The cuvée combines varieties and vineyard sites that develop a unique structure thanks to their slow maturation. Syrah, Pinot Noir, Merlot, Cabernet Sauvignon, Malbec, and Zweigelt are each fermented separately using traditional skin fermentation with stem inclusion ranging between five and fifteen percent. Pinotage, the South African variety, undergoes carbonic maceration, contributing its fine tannins to the blend. Each variety is then aged in barriques for 18 months before being blending shortly before bottling. After six months of bottle maturation, the result is a highly concentrated and elegant red wine with excellent aging potential.
