Over the last few months, it's been "tradition meets curiosity" for us, because we had an idea:
100% Gravensteiner from our Hochstamm plantation, pressed with our fruit press from the 1950s. But that wasn't enough for us - we needed a little more flavor.
So we fermented Gewürztraminer pomace with apple juice. Spontaneously, of course, Pétillant Naturel. And after fermentation, we disgorged by hand - and the Büezerbrause is ready.
Sparkling, fruity and with real character.
