Roter Räuschling is an almost extinct natural mutation of the classic Räuschling grape. Once popular as a table grape, today only 17 ares remain, offering the potential to produce truly intriguing wines. This grape variety does not rely on high sugar levels to impress, but rather on its refreshing acidity. After harvest, the grapes are destemmed and placed as a mash with an additional 10% whole clusters into a traditional Spanish tinaja. Once fermentation is complete, the tinaja is topped up and the wine remains on the skins for nine months. Following gentle pressing in July, the wine is transferred to a stainless steel tank for stabilization before being bottled at the end of April. To achieve optimal maturity and harmony, the wine then ages for at least one year in the bottle. In the glass, Roter Räuschling demonstrates its liveliness and layered complexity.
