Stäfa Räuschling is our signature native grape variety. Our entry-level Räuschling is exclusively sourced from the youngest vines on the estate. The majority of these vines are located in the Lattenberg parcel, which encircles the winery at an elevation ranging from 500 to 520 metres above sea level. The grapes are harvested together and undergo a one-hour maceration on the press. After pressing, the entry-level Räuschling is fermented in stainless steel tanks and aged on fine lees. Following bottling in April, the wine continues to mature in bottle until January of the following year, allowing a gentle maturation that results in a smoother and more balanced profile. This creates a harmonious and elegant aperitif wine, that pairs well with both fish and light dishes.
